NEW HOME CANNING
PUBLICATIONS TO BE
AVAILABLE AFTER JUNE 15

Have you thought about what you're going to do
with all those extra tomatoes and zucchini from your
garden after your neighbors have had their fill? Two
new publications, "Tomato Products" and "Pickl-
ed Products", available from the Minnesota Exten-
sion Service, may be just what you need. A third new
publication, "Reduced-sugar Fruit Spreads,"
presents new ways to use berries and other fruits
in spreads that will help keep you from spreading.
Authored by William Schafer, University of Min-
nesota food technologist, these publications are bas-
ed on research conducted at Pennsylvania State
University's Center for Excellence in Home Food
Preservation.
This group of publications provides only those can-
ning methods not currently addressed in existing
Minnesota Extension Service Publications. Existing
extension publications are scheduled for a summer
1989 revision to reflect other recent USDA research.
New methods for tomato and Mexican tomato
sauces and spaghetti sauces (with or without meat)
are featured on "Tomato Products" as are new
methods for hot salsa, tomato, and "Pickled Pro-
ducts" includes a new method for bread and butter
zucchini pickles. Other recipes use beans, beets,
cauliflower, brussel sprouts, peppers and corn. And,
if you're watching your sodium intake, there is a
reduced-sodium dill pickle method.
In "Reduced-Sugar Fruit Spreads" you will find
procedures for peach-pineapple, blackberry,
- blueberry, and cherry spreads as well as refrigerated
grape and apple and freezer strawberry spread.
These new home canning publications will be
available after June 15 from the Anoka County Ex-
tension office. Call 755-1280 to order your copies
soon and do something nice for your zucchini and
your neighbors.
NEW MINNESOTA BED &
BREAKFAST, HISTORIC INNS
DIRECTORY AVAILABLE

From a mansion on the shores of Lake Superior
to a Victorian home in a Mississippi River town, 65
unique getaways are described in the 1988 Explore
Minnesota Bed and Breakfast and Historic Inns
brochure, published by the Minnesota Office of
Tourism.
Over one-third of the bed and breakfast listings
are new since last year's edition. Minnesota bed and
breakfast homes offer a wide range of options:
carefully restored 19th century homes filled with an-
tiques, farm homes in the countryside, contemporary
homes, and even a former jail. The 49 "B & Bs"
listed in the brochure are located throughout
Minnesota.
The brochure also includes 16 historic inns and
lodges, from an 1867 inn in a quiet village to a 1926
log lodge at a wilderness resort.
Individual listings include a description of the inn
and its unique features, nearby attractions and ac-
tivities, deposit and credit card policies, and rate
information.
The Bed and Breakfast and Historic Inns brochure
and other travel information are available free from
the Minnesota Travel Information Center, 375
Jackson St., Suite 250, St. Paul, MN 55101. Or call
weekdays: 296-5029 from the Twin Cities area.
RAMSEY SENIOR CITIZENS

The Ramsey Senior Citizens Club met on July 6.
The 19 members present really enjoyed the variety
of salads that were brought for the potluck luncheon.
The Senior Club will not be meeting on August 3rd
as that as Senior Citizens Day at the Anoka County
Fair.
The Chairperson would like to take this opportunity
to request that Club members try to come up with
some suggestions for entertainment activities at the
meetings.
or would like more information, please call Zola
GROUNDBREAKING
CEREMONY FOR
CROSS OF HOPE
EXPANSION

Cross of Hope Lutheran Church started out in
1982 as a mission church with 166 members. Until
the church building could be built on its site in
Ramsey, members met at Anoka Senior High
School. Now, five years later, the church has grown
from its original number to more than 700 members,
and the small grey colonial church is bursting at the
seams.
On Sunday, June 26th, Pastor Dale Olson lead the
congregation in groundbreaking ceremonies for a
4,300 square foot addition, which will provide an
education wing to accommodate the increasing
needs of Cross of Hope's children and expand the
sanctuary. Also present at the ceremony were Kathy
Joiner, chair of the building committee, Mayor Gary
Reimann of Ramsey, and Reverend Manual
Johnson, representative from the Division for
Outreach of the Evangelical Lutheran Church of
America.
The Vanman Construction Company out of
Plymouth, the company who constructed the original
building, will complete the addition by October, 1988.

Pastor Dale Olson and Kathy Joiner, building committee chair,
lead the groundbreaking ceremony for a new addition to Cross
of Hope Lutheran Church. Other building committee members
include: Greggy Anderson, Eric Carlson, Deidre Ewert, Pstor Dale
Olson, John Sovia, John Wegner, Kathy West, and Brad
Zimmerman.
